Grilled Fruit Kabobs

Ingredients

  • 3/4 cup (180 ml) honey
  • The juice of 1 lime
  • 1 teaspoon (5 ml) fresh ginger, finely chopped
  • 1/2 teaspoon (2.5 ml) ground cinnamon
  • 1 teaspoon (5 ml) freshly ground pink peppercorn
  • 2 teaspoons (10 ml) fresh mint, chopped
  • 3 cups (750 ml) mixed fruit (mango, grape, strawberry, banana, etc..), cut into 1.5-inch (3.75-cm) pieces
  • 4 skewers

Instructions

  1. In a bowl, combine all the marinade ingredients. Add the fruit and let stand for at least one hour at room temperature.
  2. Preheat the grill to high.
  3. Thread the fruit on the skewers. Reserve the marinade.
  4. Grill for 2 to 3 minutes per side.
  5. Serve over vanilla ice cream or plain yogurt and drizzle with the remaining marinade.
