Gluten-Free Chocolate and Raspberry Cheesecake

Ingredients

  • 3/4 cup (95 g) gluten-free graham-style cracker crumbs
  • 2 tbsp unsalted butter, melted
  • 1 tbsp sugar
  • 1 tbsp cocoa powder
  • 1/8 tsp salt
  • 2 egg yolks
  • 1 tbsp sugar
  • 3/4 cup (180 ml) 35% whipping cream
  • 1/3 cup (75 ml) milk
  • 7 oz (200 g) 58% dark chocolate, chopped
  • 1 block (250 g) cream cheese, softened
  • 1 tsp gelatin
  • 3 tbsp (45 ml) cold water
  • 1/2 cup (65 g) frozen raspberries
  • 1/2 cup (55 g) frozen cranberries
  • 2 tbsp sugar
  • 6 small crispy meringues, homemade or store-bought

Instructions

  1. With the rack in the middle position, preheat the oven to 350°F (180°C). Line the bottom of a 6-inch (15 cm) springform pan with parchment paper.
  2. In a bowl, combine the graham crumbs, butter, sugar, cocoa powder and salt. Set aside 2 tbsp of the mixture in a small bowl until ready to serve. Gently press the remaining mixture along the bottom of the prepared pan. Bake for 10 minutes. Let cool.
