Gluten-Free Chocolate and Raspberry Cheesecake

Ingredients
- 3/4 cup (95 g) gluten-free graham-style cracker crumbs
- 2 tbsp unsalted butter, melted
- 1 tbsp sugar
- 1 tbsp cocoa powder
- 1/8 tsp salt
- 2 egg yolks
- 1 tbsp sugar
- 3/4 cup (180 ml) 35% whipping cream
- 1/3 cup (75 ml) milk
- 7 oz (200 g) 58% dark chocolate, chopped
- 1 block (250 g) cream cheese, softened
- 1 tsp gelatin
- 3 tbsp (45 ml) cold water
- 1/2 cup (65 g) frozen raspberries
- 1/2 cup (55 g) frozen cranberries
- 2 tbsp sugar
- 6 small crispy meringues, homemade or store-bought
Instructions
- With the rack in the middle position, preheat the oven to 350°F (180°C). Line the bottom of a 6-inch (15 cm) springform pan with parchment paper.
- In a bowl, combine the graham crumbs, butter, sugar, cocoa powder and salt. Set aside 2 tbsp of the mixture in a small bowl until ready to serve. Gently press the remaining mixture along the bottom of the prepared pan. Bake for 10 minutes. Let cool.
