Giant Cherry and Plum Turnover
Got a craving for some pie? This mega-sized turnover is bursting with cherry and plum flavour!
Ingredients
- 1/2 cup (105 g) sugar
- 3 tbsp cornstarch
- 6 red plums, pitted and cubed
- 1 jar (19 oz/540 ml) pitted morello cherries in syrup
- 2 cups (300 g) unbleached all-purpose flour
- 1/2 tsp salt
- 1 cup (225 g) unsalted butter, cold and thinly sliced
- 2/3 cup (150 ml) ice water
- 1 egg yolk, lightly beaten, for brushing
- Pearl sugar, for decorating (see note)
Instructions
- In a small pot off the heat, combine the sugar and cornstarch. Add the plums and cherries with their syrup.
- Over medium-high heat, bring the mixture to a boil while stirring constantly. Simmer for 5 minutes, stirring often. Let cool. Cover and refrigerate for 2 hours.
