Muesli and Dried Fruit Energy Bites
These little bites pack an invigorating punch. One ball is enough for before or after a jog or a gym workout.
Ingredients
- 2 tbsp chia seeds
- 2 tbsp (30 ml) apple or orange juice
- 6 tbsp (40 g) quick-cooking oats
- 1/4 cup (40 g) dried cranberries, chopped
- 1/4 cup (40 g) dried apricots, chopped
- 1/4 cup (40 g) dried blueberries (or dried currants)
- 1/4 cup (40 g) pumpkin seeds, roughly chopped
- 1/4 cup (25 g) powdered milk
- 1/4 cup (60 ml) honey
Instructions
- Using a mortar and pestle, or in a coffee grinder, coarsely grind the chia seeds. Transfer to a bowl and add the juice. Let them soak for 5 minutes.
- Add the remaining ingredients and mix well with a rubber spatula. Refrigerate for 15 minutes.
- Using a 2-tbsp (30 ml) ice-cream scoop, form the mixture into balls. Line a plate with parchment paper. Wet your hands, then finish rolling the balls with your hands, placing them on the plate as you go. Let rest for 1 hour at room temperature. The muesli bites will keep for 1 week in an airtight container at room temperature.
