Dinosaur Birthday Cake

Ingredients

  • 2 cups (300 g) unbleached all-purpose flour
  • ¾ cup (75 g) cocoa powder, sifted
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 4 eggs
  • 2 cups (420 g) sugar
  • ½ cup (125 ml) canola oil
  • 2 tsp (10 ml) vanilla
  • 1 ⅓ cups (325 ml) buttermilk
  • 5 oz (140 g) dark chocolate, chopped
  • ⅓ cup (75 ml) 35% cream
  • 1 tbsp (15 ml) corn syrup
  • 2 tbsp unsalted butter, softened
  • ¾ cup (160 g) sugar
  • 4 egg whites (see note)
  • 2,5 ml (1/2 c. à thé) d’extrait de vanille
  • 225 g (1 tasse) de beurre non salé, coupé en dés et ramolli 20 minutes
  • Gel-based food colouring in turquoise
  • 3 paper muffin liners
  • 3 pompoms
  • 3 dinosaur figurines
  • Hot glue
  • Sprinkles or other small candies, to taste

Instructions

  1. With the rack in the middle position, preheat the oven to 350°F (180°C). Butter the sides of two 6-inch (15 cm) springform pans with removeable bottoms. Line the bottoms with parchment paper (see note).
  2. In a bowl, combine the flour, cocoa powder, baking soda and baking powder.
  3. In another bowl, whisk together the eggs, sugar, oil and vanilla. Add the dry ingredients alternating with the buttermilk. Mix until smooth.
  4. Divide two-thirds of the cake batter between the two prepared cake pans, about 1 cup + 2 tbsp (280 ml) in each pan. Refrigerate the remaining batter for the third cake layer.
  5. Bake the two cakes for 40 to 45 minutes or until a toothpick inserted in the centre of the cakes comes out clean. Let cool for 15 minutes. Unmould and let cool completely on a wire rack.
  6. Clean out and dry one of the cake pans. Butter the sides of the pan and line the bottom with parchment paper. Spread the remaining cake batter out in the pan.
  7. Bake for 40 to 45 minutes or until a toothpick inserted in the centre of the cake comes out clean. Let cool for 15 minutes. Unmould and let cool completely on a wire rack, about 3 hours.
