Dessert Brie
Brie cooked in rum and maple syrup makes a delicious dessert to eat over bread or by the spoonful.
Ingredients
- 1 wheel double cream brie cheese, about 7 oz (200 g) (preferably local)
- 1/4 cup (60 ml) dark rum
- 1/4 cup (60 ml) maple syrup
- 1/2 cup (105 g) brown sugar or ½ cup (80 g) maple sugar
- 1/2 cup (50 g) pecans
- Toasted bread
Instructions
- Place the cheese in an 8-inch (20 cm) round baking dish. Prick the entire surface of the cheese with a fork.
- In a bowl, combine half of the rum (2 tbsp/30 ml) and half of the maple syrup (2 tbsp/30 ml). Drizzle over the cheese. Sprinkle the brown sugar over the cheese and top with the pecans. Drizzle with the remaining rum and maple syrup. Refrigerate for 2 hours.
- With the rack in the middle position, preheat the oven to 350°F (180°C).
- Bake for 20 to 25 minutes or until the cheese is hot and melting, but not runny.
- Place at the centre of the table and invite diners to dip bits of bread into the dessert or to serve themselves with spoons.
