Cream Puffs

Ingredients

  • ¼ cup (55 g) sugar
  • 2 tbsp unbleached all-purpose flour
  • 2 eggs
  • 1 tsp (5 ml) vanilla
  • 1 cup (250 ml) milk, hot
  • 2 tbsp unsalted butter, diced
  • ½ cup (125 ml) water
  • ¼ cup (55 g) unsalted butter
  • 1 pinch salt
  • ½ cup (75 g) unbleached all-purpose flour
  • 2 eggs
  • 1 oz (30 g) dark or milk chocolate, melted

Instructions

  1. In a small pot off the heat, whisk together the sugar and flour. Add the eggs and vanilla. Mix well. Add the hot milk. Bring to a boil over medium heat, whisking constantly and scraping the sides and bottom of the pot, until thickened. Let simmer for 1 to 2 minutes over low heat. Remove from the heat. Add the butter.
  2. Strain the cream through a sieve, if needed. Transfer to a bowl and cover with plastic wrap directly on the surface of the cream. Let cool. Refrigerate for 2 hours or until completely chilled. When ready to use, mix with a spatula until creamy and smooth.
