Chocolate-Cranberry Vertical Yule Log

Ingredients

  • 11 oz (300 g) white chocolate, chopped
  • 2 ½ cups (625 ml) 35% cream
  • 2 tsp (10 ml) vanilla
  • ½ tsp gelatin
  • 1 tbsp (15 ml) water
  • 2 cups (210 g) fresh or frozen cranberries, plus more for decorating
  • ¾ cup (160 g) sugar
  • 1 tbsp (15 ml) lemon juice
  • 2 oz (55 g) dark chocolate, melted and tempered
  • 1 tbsp cocoa powder
  • 1 cup (150 g) unbleached all-purpose flour
  • ⅓ cup (35 g) cocoa powder, sifted
  • 2 tsp baking powder
  • 1 pinch salt
  • 5 eggs, at room temperature
  • ¾ cup (160 g) sugar
  • ¼ cup (60 ml) vegetable oil
  • Rosemary sprigs (optional)

Instructions

  1. Place the white chocolate in a bowl.
  2. In a small pot, bring the cream and vanilla to a boil. Pour the hot cream over the chocolate. Let sit for 2 minutes without stirring. Whisk until smooth. Cover and refrigerate for 8 hours.
