Chocolate-Cranberry Vertical Yule Log
Ingredients
- 11 oz (300 g) white chocolate, chopped
- 2 ½ cups (625 ml) 35% cream
- 2 tsp (10 ml) vanilla
- ½ tsp gelatin
- 1 tbsp (15 ml) water
- 2 cups (210 g) fresh or frozen cranberries, plus more for decorating
- ¾ cup (160 g) sugar
- 1 tbsp (15 ml) lemon juice
- 2 oz (55 g) dark chocolate, melted and tempered
- 1 tbsp cocoa powder
- 1 cup (150 g) unbleached all-purpose flour
- ⅓ cup (35 g) cocoa powder, sifted
- 2 tsp baking powder
- 1 pinch salt
- 5 eggs, at room temperature
- ¾ cup (160 g) sugar
- ¼ cup (60 ml) vegetable oil
- Rosemary sprigs (optional)
Instructions
- Place the white chocolate in a bowl.
- In a small pot, bring the cream and vanilla to a boil. Pour the hot cream over the chocolate. Let sit for 2 minutes without stirring. Whisk until smooth. Cover and refrigerate for 8 hours.
