Chocolate Cake with Tea-infused Ganache

Ingredients

  • 1 1/4 cups (190 g) unbleached all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup (160 g) brown sugar
  • 1/2 cup (125 ml) canola oil
  • 1/3 cup (35 g) cocoa powder
  • 1/2 tsp (2.5 ml) vanilla extract
  • 2 eggs 

  • 3/4 cup (180 ml) milk
  • 5 oz (140 g) dark chocolate, chopped
  • 3/4 cup (180 ml) 35% whipping cream
  • 2 tbsp (30 ml) corn syrup
  • 1 tbsp (15 ml) Earl Grey tea leaves
  • 2 tbsp unsalted butter, cold

Instructions

  1. With the rack in the middle position, preheat the oven to 350°F (180°C). Generously butter an 8-inch (20 cm) square baking dish.
  2. In a bowl, combine the flour, baking powder, baking soda, and salt.
  3. In another bowl, combine the brown sugar, oil, cocoa powder, and vanilla with an electric mixer. Add the eggs, one at a time, and beat until the mixture is smooth. At low speed, add the dry ingredients alternating with the milk. Pour the batter into the prepared pan.
  4. Bake for 40 minutes or until a toothpick inserted in the centre of the cake comes out clean. Cool completely in the pan.
