Chocolate Cake with Tea-infused Ganache
Ingredients
- 1 1/4 cups (190 g) unbleached all-purpose flour
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt
- 3/4 cup (160 g) brown sugar
- 1/2 cup (125 ml) canola oil
- 1/3 cup (35 g) cocoa powder
- 1/2 tsp (2.5 ml) vanilla extract
- 2 eggs
- 3/4 cup (180 ml) milk
- 5 oz (140 g) dark chocolate, chopped
- 3/4 cup (180 ml) 35% whipping cream
- 2 tbsp (30 ml) corn syrup
- 1 tbsp (15 ml) Earl Grey tea leaves
- 2 tbsp unsalted butter, cold
Instructions
- With the rack in the middle position, preheat the oven to 350°F (180°C). Generously butter an 8-inch (20 cm) square baking dish.
- In a bowl, combine the flour, baking powder, baking soda, and salt.
- In another bowl, combine the brown sugar, oil, cocoa powder, and vanilla with an electric mixer. Add the eggs, one at a time, and beat until the mixture is smooth. At low speed, add the dry ingredients alternating with the milk. Pour the batter into the prepared pan.
- Bake for 40 minutes or until a toothpick inserted in the centre of the cake comes out clean. Cool completely in the pan.
