Chocolate and Strawberry Mousse Cake

Ingredients

  • 1 cup (250 ml) cake flour
  • 1/3 cup (75 ml) cocoa powder
  • A pinch of salt
  • 1 teaspoon (5 ml) baking powder
  • 5 eggs
  • 3/4 cup (180 ml) sugar
  • 1/4 cup (60 ml) unsalted butter, melted and cooled
  • 4 teaspoons (20 ml) gelatin
  • 2 tablespoons (30 ml) cold water
  • 2 cups (500 ml) fresh strawberries, hulled
  • 3 egg whites
  • 1/2 cup (125 ml) sugar
  • Strawberries, for garnish

Instructions

  1. Preheat the oven to 180 °C (350 °F).
  2. Line a 38 x 25-cm (15 x 10-inch) Pyrex pan with parchment paper. Lightly butter the paper.
  3. In a bowl, combine the flour, cocoa powder, salt and baking powder.
  4. In another bowl, whisk the eggs with the sugar with an electric mixer for 5 minutes.
  5. Gently fold in the dry ingredients alternating with the butter. Spoon the batter into the prepared pan. Bake in the centre of the oven for about 13 minutes.
  6. Right out of the oven, flip the cake onto a parchment paper dusted with sugar. Remove the baking paper. Let cool.
