Cherry Compote

Ingredients

  • 1/3 cup (70 g) sugar
  • ¼ cup (60 ml) water
  • 2 tsp cornstarch
  • 2 cups (270 g) fresh or frozen black cherries, pitted and halved

Instructions

  1. In a pot off the heat, whisk together the sugar, water and cornstarch. Add the cherries. Cook over medium heat, stirring with a wooden spoon, until simmering. Cook for 1 minute longer. Pour into a bowl and let cool.
  2. Delicious spread on toast or spooned over Double Chocolate Waffles. The cherry compote will keep for 1 week in an airtight container in the refrigerator.
