Brookies
This brookie recipe, a combination of a brownie and a cookie, is a treat the kids will definitely enjoy!
Ingredients
- 1/2 cup (75 g) unbleached all-purpose flour
- 1/4 tsp baking soda
- 1/8 tsp salt
- 1/4 cup (55 g) unsalted butter, melted
- 1/2 cup (105 g) brown sugar
- 1 egg yolk
- 1 tsp (5 ml) vanilla
- 4 oz (115 g) chocolate chips (dark or semi-sweet)
- 4 oz (115 g) chocolate chips (dark or semi-sweet)
- 1/4 cup (55 g) unsalted butter, cubed
- 1/3 cup (70 g) brown sugar
- 1 egg
- 1/3 cup (50 g) unbleached all-purpose flour
Instructions
- With the rack in the middle position, preheat the oven to 375°F (190°C). Generously butter two 9-cup muffin tins.
- In a bowl, combine the flour, baking soda and salt.
- In another bowl, whisk together the melted butter and brown sugar. Add the egg yolk and vanilla. Whisk vigorously for 1 minute. With a spatula, fold in the flour mixture, then the chocolate chips. Place about 4 tsp of the batter in each muffin cup, pressing down lightly, completely covering the bottoms. Set aside.
