This brookie recipe, a combination of a brownie and a cookie, is a treat the kids will definitely enjoy!

Ingredients

  • 1/2 cup (75 g) unbleached all-purpose flour
  • 1/4 tsp baking soda
  • 1/8 tsp salt
  • 1/4 cup (55 g) unsalted butter, melted
  • 1/2 cup (105 g) brown sugar
  • 1 egg yolk
  • 1 tsp (5 ml) vanilla
  • 4 oz (115 g) chocolate chips (dark or semi-sweet)
  • 4 oz (115 g) chocolate chips (dark or semi-sweet)
  • 1/4 cup (55 g) unsalted butter, cubed
  • 1/3 cup (70 g) brown sugar
  • 1 egg
  • 1/3 cup (50 g) unbleached all-purpose flour

Instructions

  1. With the rack in the middle position, preheat the oven to 375°F (190°C). Generously butter two 9-cup muffin tins.
  2. In a bowl, combine the flour, baking soda and salt.
  3. In another bowl, whisk together the melted butter and brown sugar. Add the egg yolk and vanilla. Whisk vigorously for 1 minute. With a spatula, fold in the flour mixture, then the chocolate chips. Place about 4 tsp of the batter in each muffin cup, pressing down lightly, completely covering the bottoms. Set aside.
