Blueberry Squares
Ingredients
- 1 cup (250 ml) unbleached all-purpose flour
- 3 tablespoons (45 ml) icing sugar
- 1/3 cup (75 ml) unsalted butter, softened
- 8 oz (250 g) cream cheese, softened
- 1/4 cup (60 ml) sugar
- 1 egg
- 2 oz (55 g) white chocolate, melted and cooled
- 1 1/2 cups (375 ml) small blueberries, fresh or frozen
Instructions
- With the rack in the middle position, preheat the oven to 180 °C (350 °F). Butter and line a 20-cm (8-inch) square pan with a strip of parchment paper, letting it extend over both sides. Set aside.
- In a food processor, combine flour and icing sugar. Add butter and pulse until dough is just moistened. Press into the bottom of the prepared pan. Bake for 15 minutes or until edges of dough are lightly browned.
