Banana Cream Pie Puffs

Ingredients

  • ½ cup (105 g) sugar
  • 2 tbsp cornstarch
  • 2 tbsp unbleached all-purpose flour
  • 3 eggs
  • 2 cups (500 ml) milk
  • 1 tsp (5 ml) vanilla
  • 2/3 cup + 1 tbsp (165 ml) water
  • 1/3 cup (75 g) unsalted butter
  • 1 tsp sugar
  • ¼ tsp salt
  • 2/3 cup (100 g) unbleached all-purpose flour
  • 4 eggs
  • 1 cup (250 ml) 35% whipping cream
  • 2 tbsp sugar
  • ¼ tsp (1 ml) vanilla
  • 2 bananas, sliced
  • ¼ cup (60 ml) homemade or store-bought caramel

Instructions

  1. In a pot off the heat, whisk together the sugar, cornstarch and flour. Add the eggs and whisk until smooth. Add the milk and vanilla. Bring to a boil over medium heat, whisking constantly and scraping the sides and bottom of the pot, until thickened. Strain the pastry cream, if needed. Transfer to a bowl and cover with plastic wrap directly on the surface of the cream. Refrigerate for 3 hours or until completely chilled.
