Apricot and Pistachio Salad
Ingredients
- 1 recipe Yogurt Cream
- 8 small apricots, cut into quarters
- 30 ml (2 tbsp) honey
- 30 ml (2 tbsp) Grand Marnier
- 30 ml (2 tbsp) pistachio, finely ground
Instructions
- In a bowl, combine the apricots with the honey and Grand Marnier. Let rest for about 15 minutes. Spread yogurt cream in the centre of each plate. Garnish with the apricots. Sprinkle with the pistachios.
