Almond and Dark Chocolate Energy Bars
Ingredients
- ½ cup (90 g) Medjool dates, pitted and halved
- ¼ cup (60 ml) water
- ¼ cup (60 ml) maple syrup
- 3 tbsp (45 ml) almond butter
- 1 tsp (5 ml) vanilla
- 1 cup (100 g) quick-cooking oats
- 2 oz (55 g) dark chocolate, chopped
- 1/3 cup (35 g) roasted almonds, chopped
- 3 tbsp chia seeds
- 1 cup (25 g) puffed rice cereal
- 1 pinch fleur de sel
Instructions
- With the rack in the middle position, preheat the oven to 325°F (165°C). Line an 8-inch (20 cm) square pan with a strip of parchment paper, letting it hang over two sides.
- In a blender or small food processor, purée the dates with the water, maple syrup, almond butter and vanilla until smooth. Transfer to a large bowl. Add the remaining ingredients and mix well. Spread the mixture out in the prepared pan and press down firmly with your fingers.
- Bake for 15 minutes or until the oats and rice cereal are lightly golden. Let cool. Unmould. On a work surface, cut into 10 bars. The energy bars will keep for 1 week in an airtight container at room temperature.
