Almond and Dark Chocolate Energy Bars

Ingredients

  • ½ cup (90 g) Medjool dates, pitted and halved
  • ¼ cup (60 ml) water
  • ¼ cup (60 ml) maple syrup
  • 3 tbsp (45 ml) almond butter
  • 1 tsp (5 ml) vanilla
  • 1 cup (100 g) quick-cooking oats
  • 2 oz (55 g) dark chocolate, chopped
  • 1/3 cup (35 g) roasted almonds, chopped
  • 3 tbsp chia seeds
  • 1 cup (25 g) puffed rice cereal
  • 1 pinch fleur de sel

Instructions

  1. With the rack in the middle position, preheat the oven to 325°F (165°C). Line an 8-inch (20 cm) square pan with a strip of parchment paper, letting it hang over two sides.
  2. In a blender or small food processor, purée the dates with the water, maple syrup, almond butter and vanilla until smooth. Transfer to a large bowl. Add the remaining ingredients and mix well. Spread the mixture out in the prepared pan and press down firmly with your fingers.
  3. Bake for 15 minutes or until the oats and rice cereal are lightly golden. Let cool. Unmould. On a work surface, cut into 10 bars. The energy bars will keep for 1 week in an airtight container at room temperature.
