Inspired by Thai cuisine, this spicy noodle salad with lemongrass pork skewers combines crunchy veggies and fresh herbs. It also is accompanied by a spicy dressing made from chili paste, sambal oelek, mirin, fish sauce and lemongrass, which gives it just the right amount of kick.

Green Curry Chicken
Curries are dishes made with a sauce and a base that always consists of chili paste; the pigmentation of the paste changes the colour of the curry. We’ve come up with a green version that includes cilantro, kaffir lime leaves, fresh and fragrant, lemongrass and coconut milk. The dish would be just as delicious with fish.

Thai Iced Tea
To beat the heat, there’s nothing like Thai iced tea. To make it, just mix boiling water with brown sugar and spices, then infuse black tea in the mixture. Once the tea has cooled down, pour it into a glass with plenty of ice, then add the coconut beverage and sweetened condensed milk.

We’ve adapted it so that it’s not too intense. It contains typical rice noodles, slightly springy and beautifully shiny; you get the right texture by letting them soak in hot water and mixing them with sauce to finish the cooking. This one is sweet, salty and syrupy thanks to a blend of oyster sauce, brown sugar and soy sauce.
