  • Stir-Fried Noodles with Vegetables

    Stir-Fried Noodles with Vegetables

Bitter rapini high-fives a creamy mixture of scrambled eggs in this casual and addictive main course dish, which works with any kind of noodle you like. But the real secret is the sauce: Thai seasoning adds that delicious umami je ne sais quoi, along with oyster sauce, chili and a healthy dose of fresh cilantro for a vibrant finish.

  • Japanese Fondue (Shabu-Shabu)

    Japanese Fondue (Shabu-Shabu)

For prime fondue inspiration, we looked to traditional Japanese hot pot, shabu-shabu—a dish whose name comes from the sound of ingredients being stirred and cooked in dashi (the umami-rich broth made with kelp and bonito flakes). Our shabu shortcut involved a mix of beef and chicken broths, simmered and spiked with ginger, soy sauce and that savoury saltiness that only nori (a.k.a. dried seaweed) can provide. For best textural results, we precooked our carrots and soba noodles until al dente—the thin slices of raw beef, mushrooms and spinach, however, need only a short dip in their well-seasoned and piping-hot bath.

Fried Tofu, Eggplant and Green Beans

Deep-frying Chinese eggplant—the real superstar in this recipe—brings out the addictively sweet side of the fruit (yes, fruit!). Tossed with tofu and green beans, this quick stir-fry supper gets its swagger from a mix of soybean paste, seasoning sauce, unctuous oyster sauce and the peppy kick of a bird’s-eye chili.

    Ramen Soup with Tofu

Sluuuuurp! When your ramen’s ready, don’t be afraid to get close and make a little noise. In Japan, the home of ramen, it’s the norm. Hovering over the broth allows you to enjoy its aromas, and slurping your noodles helps cool them down.

    Asian-Style Quinoa Salad

Hearty quinoa is a well-known superstar in grain bowls and salads, but don’t rule it out as a striking side. Over a mix of raw and cooked vegetables, this dish’s tangy, Asian-inspired vinaigrette calls to mind the light, vegetable-oil-based soy-maple marinade we used for the pork chops, tying everything together on the plate.
