Yellow Fruit Salad

Ingredients

  • 3/4 cup (180 ml) coconut milk
  • 2 tablespoons (30 ml) sugar
  • 1 tablespoon (15 ml) finely chopped fresh lemongrass
  • 1 medium pineapple, peeled and cubed
  • 1 mango, peeled and cubed
  • 4 yellow kiwis, peeled and cubed
  • 2 bananas, peeled and sliced
  • Grated zest of 1 lime

Instructions

  1. In a saucepan, bring all the ingredients to a boil. Simmer for about 2 minutes. Strain and refrigerate until completely chilled, about 30 minutes.
