Wild Rice and Peach Salad
Ingredients
- 3/4 cup (180 ml) wild rice
- 4 cups (1 litre) salted water
- 1/2 cup (125 ml) jasmine rice
- 1 cup (250 ml) salted water
- 1 tablespoon (15 ml) soy sauce
- 2 teaspoons (10 ml) brown sugar
- 3 tablespoons (45 ml) red wine vinegar
- 1/2 cup (125 ml) sunflower oil
- Salt and pepper
- 2 cups (500 ml) fresh peaches, peeled and diced (see note)
- 1 green onion, thinly sliced
- 1/2 red bell pepper, cut into small dice
Instructions
- In a saucepan, bring the wild rice and 1 litre (4 cups) of salted water to a boil. Cover and simmer over medium heat for about 1 hour. Drain. Place in a bowl and let cool.
- In the meantime, in another saucepan, bring the jasmine rice and 250 ml (1 cup) of salted water to a boil. Stir, cover, reduce the heat to low and cook for 15 to 20 minutes. Remove from the heat, place in a bowl and let cool.
