Watermelon Margarita
Pink is the word for this tequila and lime cocktail perfect to sip on the terrace. Colourful and fruity, thanks to the presence of watermelon, this version of Mexico’s iconic cocktail is so refreshing. A nice way to use leftover watermelon that’s slightly past its prime. Ingredients
- 4 cups (600 g) seedless watermelon, peeled and cubed
- 1 cup (250 ml) lime juice
- 1 cup (250 ml) white or amber tequila (reposado)
- 1 cup (250 ml) Triple Sec
- 2 tbsp fine sea salt
- 1 tsp Korean chili powder or Tajin seasoning, or ¼ tsp cayenne pepper
- 2 limes, cut into rounds
- Ice cubes
Instructions
- Place the watermelon cubes on a large plate or small baking sheet. Freeze for 1 hour (see note).
- In a blender or food processor, purée the watermelon with the lime juice, tequila and Triple Sec until smooth. Pour into a pitcher.
- On a small plate, combine the salt and chili powder. Rub the rims of your glasses with a slice of lime. Coat the rims of each glass with the salt mixture. Place a few ice cubes and slices of lime in each glass. Top with the margarita mixture.
