Warm Leek and Cheddar Dip
Combining the flavours of leek and cheddar, this warm dip takes inspiration from our slow cooker warm artichoke dip. Serve with raw veggies, saltine crackers or any other cracker of your choice.
Ingredients
- 1 large leek, cut into small dice
- 2 tbsp butter
- 6 cups (140 g) baby spinach, coarsely chopped
- 3/4 cup (180 ml) 35% cooking cream
- 2 blocks (250 g each) cream cheese, softened and cubed
- 2 cups (200 g) sharp cheddar cheese, grated
- 1 jalapeño chili pepper, seeded and chopped (optional)
- Vegetable crudités or soda crackers, for serving
Instructions
- In a large skillet over medium heat, soften the leek in the butter. Add the spinach and continue to cook for 2 minutes while stirring. Season with salt and pepper. Transfer to a slow cooker.
- Add the remaining ingredients to the slow cooker. Mix well. Cover and cook on Low for 1 hour. The dip can be maintained on Warm for up to 1 hour.
- When ready to serve, mix well. Adjust the seasoning. Serve with vegetable crudités or soda crackers.
