Warm Broccoli Salad with Blood Orange and Creamy Almond Dressing
Ingredients
- ¼ cup (60 ml) almond butter
- 3 tbsp (45 ml) water
- 2 tbsp (30 ml) olive oil
- 1 tbsp (15 ml) lemon juice
- 1 broccoli, about ¾ lb (340 g)
- ½ cup (125 ml) water
- 2 tbsp (30 ml) olive oil
- ¼ tsp red pepper flakes
- 1 orange, zest finely grated
- 1 small garlic clove, chopped
- 1 cup (150 g) cooked quinoa (see note)
- 3 blood oranges (see note), peeled down to the flesh, cut into rounds
- ⅓ cup (60 g) roasted almonds, roughly chopped
Instructions
- In a glass jar fitted with an airtight lid, vigorously shake all of the ingredients until emulsified. Add 1 tbsp (15 ml) water, as needed. Season with salt and pepper. Set aside.
