Two-Salmon Tartare, Pomegranate and Salted Chips
Ingredients
- 1/2 lb (225 g) skinless salmon fillet, very fresh, cut into small dice
- 3 slices smoked salmon, diced
- 1 small red onion, finely chopped
- 1/2 pomegranate, seeds only
- 1 green onion, chopped
- 1 tablespoon (15 ml) capers, finely chopped
- 1 tablespoon (15 ml) olive oil
- 1 tablespoon (15 ml) mayonnaise
- 1 tablespoon (15 ml) Dijon or whole-grain mustard
- 1 tablespoon (15 ml) crushed plain potato chips (or tempura)
- Sea salt, to taste
- Sriracha sauce, to taste
Instructions
- In a bowl, combine all ingredients. Serve immediately in wonton spoons or roll in California maki (see recipe).
