Tropical Mignonette

Ingredients
- 1/4 cup (45 g) mango, diced small
- 2 tbsp (30 ml white wine vinegar
- 1 tbsp red pepper, seeded and diced small
- 1 pinch freshly ground black pepper
Instructions
- In a bowl, combine all of the ingredients. Marinate for 15 minutes. Top oysters with the mignonette, to taste. The mignonette will keep for 2 days in an airtight container in the refrigerator.
