Tricolor Bell Pepper Relish
Ingredients
- 1 red bell pepper, finely chopped
- 1 orange bell pepper, finely chopped
- 1 yellow bell pepper, finely chopped
- 1 onion, finely chopped
- 1/2 cup (125 ml) cider vinegar
- 1/2 cup (125 ml) water
- 1/4 cup (60 ml) sugar
- 1 clove garlic, finely chopped
- 1/2 teaspoon (2.5 ml) crushed red pepper or more to taste
- Salt
Instructions
- n a saucepan, bring all of the ingredients to a boil. Simmer for about 35 minutes or until the vegetables are tender and the liquid has almost completely evaporated. Season with salt. Cool and refrigerate for about 2 hours. Freeze or put into jars. Sterilize for 15 minutes in boiling water for a long shelf life.
- Serve over grilled fish, meat or your favorite burger.
