Toppings for Shrimp and Cheese Pupusas
Ingredients
- 1 cup (250 ml) chicken broth
- 1 can (14 oz/398 ml) diced tomatoes
- 1 small onion, cubed
- 1 tsp ground cumin
- 1 tsp dried oregano
- 1 tsp garlic powder
- 1 tsp red pepper flakes
- 3 cups (255 g) green cabbage, grated
- 1 large carrot, grated
- ½ cup (125 ml) apple cider vinegar
- ½ cup (125 ml) water
- ½ jalapeno chili pepper, seeded and finely chopped
- ½ tsp ground cumin
- ½ tsp garlic powder
Instructions
- In a blender, purée all of the ingredients until smooth.
- In a small pot, bring the tomato mixture to a boil. Simmer for 5 minutes or until the sauce starts to thicken slightly. Season with salt and pepper. Let cool.
