Tomato Napoleon with Chive Vinaigrette
Ingredients
- 1/4 cup (60 ml) olive oil
- 1/4 cup (10 g) chopped fresh chives
- 3 tbsps (45 ml) lemon juice
- 1 tbsp shallot, finely chopped
- 1 tsp (5 ml) mustard
- 1 tsp sugar
- Fleur de sel
- 4 tomatoes of different colours, yellow, red, orange and black, cut into 1/2-inch (1-cm) slices
- 1 ball 250 g mozzarina, cut into 1/4-inch (1/2-cm) slices
- 16 thin baguette slices, cut diagonally, brushed with olive oil and grilled
Instructions
- In a bowl, whisk together all of the ingredients. Season with salt and pepper. Set aside.
