Three-Fruit Ketchup
Ingredients
- 1 teaspoon (5 ml) coriander seeds
- 1 teaspoon (5 ml) peppercorns
- 1 bay leaf
- 1 clove
- 3 plum tomatoes, diced
- 1 pear, peeled, seeded and diced
- 1 red plum, diced
- 1 large onion, diced
- 1/2 cup (125 ml) sugar
- 1/2 cup (125 ml) white vinegar
- 1/4 teaspoon (1 ml) salt
Instructions
- Place the spices in a tea ball or tie them in cheesecloth.
- In a saucepan, bring the remaining ingredients to a boil with the spices and stir.
- Simmer over medium heat, stirring frequently, for about 45 minutes or until the fruit is translucent and the juices are syrupy. Let cool and refrigerate. Store in an airtight container.
