The Laurel
Ingredients
- 1 cup (250 ml) water
- ½ cup (105 g) sugar
- 5 very ripe black figs, diced, plus more for serving
- 3 fresh bay leaves, finely chopped, plus more for serving (see note)
- 2 oz (60 ml) fig and bay leaf syrup
- 1 oz (30 ml) lemon juice
- 1 oz (30 ml) brandy
- ½ oz (15 ml) Galliano-style vanilla liqueur
- Ice cubes and crushed ice
Instructions
- In a small pot, bring the water, sugar, figs and bay leaves to a boil. Simmer for 3 minutes. Pour into a bowl and let cool. Cover and refrigerate until completely chilled, about 1 hour. Strain through a sieve. Compost the aromatics. There will be enough syrup to prepare four cocktails.
