Tabbouleh (Parsley Salad)

Ingredients

  • 1 cup (180 g) fine bulgur (cracked wheat)
  • 3 green onions, chopped
  • 1 cup (30 g) fresh parsley, finely chopped
  • 1 1/2 cups (255 g) tomatoes, seeded and diced (about 3 tomatoes)
  • 3 tbsp (45 ml) lemon juice
  • 1/4 cup (60 ml) olive oil
  • 2 tbsp fresh mint, finely chopped

Instructions

  1. In a bowl, place the bulgur and cover with hot water. Soak for 30 minutes. Drain. Set aside.
  2. In a salad bowl, combine the bulgur with the remaining ingredients. Season with salt and pepper. Let rest for 2 hours before serving, if possible.
