Spinach Salad with Warm Green Onion Dressing
Ingredients
- 1 ½ cups (75 g) fresh rye bread, cut into small dice
- 2 tbsp butter
- 4 oz (115 g) dry sausage, cut into small dice
- ¼ cup (60 ml) olive oil
- 2 green onions, thinly sliced
- 3 tbsp (45 ml) red wine vinegar
- 2 tbsp immature elderberries (see note) or capers
- 1 tbsp (15 ml) honey
- 6 cups (180 g) fresh spinach, torn
- ½ cup (50 g) Le Gré des Champs cheese, grated (see note)
Instructions
- With the rack in the middle position, preheat the oven to 325°F (165°C).
- In an ovenproof skillet over medium heat, brown the bread in the butter. Season with salt. Bake in the oven for 6 minutes or until crispy.
