Spinach Salad with Warm Green Onion Dressing

Ingredients

  • 1 ½ cups (75 g) fresh rye bread, cut into small dice
  • 2 tbsp butter
  • 4 oz (115 g) dry sausage, cut into small dice
  • ¼ cup (60 ml) olive oil
  • 2 green onions, thinly sliced
  • 3 tbsp (45 ml) red wine vinegar
  • 2 tbsp immature elderberries (see note) or capers
  • 1 tbsp (15 ml) honey
  • 6 cups (180 g) fresh spinach, torn
  • ½ cup (50 g) Le Gré des Champs cheese, grated (see note)

Instructions

  1. With the rack in the middle position, preheat the oven to 325°F (165°C).
  2. In an ovenproof skillet over medium heat, brown the bread in the butter. Season with salt. Bake in the oven for 6 minutes or until crispy.
