Spinach Salad with Satay Dressing
Ingredients
- 1/4 cup (60 ml) water
- 2 tablespoons (30 ml) rice vinegar
- 1 tablespoon (15 ml) sugar
- 1 tablespoon (15 ml) soy sauce
- 1 tablespoon (15 ml) lime juice
- Grated zest of 1 lime
- 2 tablespoons (30 ml) unsweetened, unsalted peanut butter
- 1 pinch cumin
- 1/4 teaspoon (1 ml) ground coriander
- 1 pinch Cayenne pepper
- 6 cups (1.5 litres) baby spinach
- 2 cups (500 ml) bean sprouts
- 2 green onions, sliced diagonally
- 1/3 cup (75 ml) salted peanuts, toasted and coarsely chopped
- Salt and pepper
Instructions
- In a saucepan, bring all the ingredients to a boil, stirring constantly. Allow to cool.
