Spinach and Coconut Salad with Coffee Dressing
Ingredients
- 1 teaspoon (5 ml) chicken broth
- 1 teaspoon (5 ml) strong coffee, cooled
- 1 teaspoon (5 ml) balsamic vinegar
- 1/4 cup (60 ml) olive oil
- Salt and pepper
- 4 cups (1 litre) baby spinach
- 1/3 cup (75 ml) shredded unsweetened coconut, toasted
Instructions
- In a bowl, combine all the ingredients. Set aside.
