Smashed Cucumber Salad
Here’s a recipe that takes the humble cucumber to the next level. This Chinese-inspired salad includes an Asian condiment that has become all the rage in our kitchen: black bean chili sauce.
Ingredients
- 6 Lebanese cucumbers
- 1/4 tsp salt
- 1 small garlic clove, finely chopped
- 2 tbsp (30 ml) black bean chili sauce
- 2 tbsp cilantro, finely chopped
- 2 tbsp roasted peanuts, chopped
- 1 tbsp (15 ml) rice vinegar
- 1/2 tsp (2.5 ml) toasted sesame oil
- 1/4 tsp sugar
Instructions
- On a work surface, firmly crush the whole cucumbers one at a time using a plate. Cut into ¾-inch (2 cm) pieces and place in a bowl. Add the salt and let sit for 10 minutes. Drain.
- Add the remaining ingredients to the bowl of cucumbers. Mix well. Adjust the seasoning. Serve immediately.
