Shrimp with White Chocolate Sauce and Mashed Cauliflower
Ingredients
- 4 cups (1 litre) cauliflower, cut into florets
- 1/2 onion, finely chopped
- 2 cups (500 ml) milk
- 2 tablespoons (30 ml) butter
- Salt and pepper
- 1/4 cup (60 ml) finely chopped onion
- 1/3 cup (75 ml) butter
- 1 clove garlic, finely chopped
- 1 slice fresh ginger, about 1/4-inch (1/2-cm) thick
- 1/2 cup (125 ml) apple cider
- 3/4 lb (350 g) large shrimp (about 18)
- 1/2 oz (15 g) white chocolate, chopped
Instructions
- In a large pot, bring the cauliflower, onion, and milk to a boil. Cover and simmer for about 15 minutes. Drain well.
- In a food processor, purée the cauliflower with the butter until smooth. Season with salt and pepper. Keep warm.
