Roasted Radishes with Whipped Ricotta
Ingredients
- ¾ lb (340 g) radishes with leaves, various colours, washed and halved
- 3 tbsp (45 ml) olive oil
- 1 tbsp (15 ml) lemon juice
- 1 tbsp (15 ml) maple syrup
- 1 tsp garam masala
- 1 small garlic clove, chopped
- 1 container (300 g) ricotta cheese
- ½ cup (125 ml) sour cream
- 1 tbsp roasted pistachios, chopped
- 1 tsp roasted sesame seeds
- 12 mint leaves, torn
Instructions
- With the rack in the middle position, preheat the oven to 450°F (230°C). Line a baking sheet with a silicone mat or parchment paper.
- On the baking sheet, toss the radishes with 1 tbsp (15 ml) of the oil, the lemon juice, maple syrup, garam masala and garlic. Season with salt and pepper. Bake for 10 minutes or until the radishes are al dente. Let cool.
- Meanwhile, in a bowl, whisk the ricotta with the sour cream and 1 tbsp (15 ml) of the oil for 1 to 2 minutes or until smooth. Season with salt and pepper.
- Spread the ricotta out on a serving dish. Top with the radishes and drizzle with the remaining oil. Sprinkle with the pistachios, sesame seeds and mint leaves.
