Roasted Pumpkin with Cilantro
Ingredients
- 4 cups (600 g) pumpkin, cubed
- 2 tbsp olive oil
- 2 tbsp pumkin seeds, toasted
- 2 tbsp fresh cilantro
- 1 green onion, chopped
Instructions
- Place the rack at the centre of the oven. Preheat the oven to 400 °F (200 °C). Layer a baking sheet with parchment paper.
- On the baking sheet, mix the pumpkin with the oil. Season with salt and pepper. Bake in the oven for 40 minutes or until the pumpkin is tender and golden. Add the remaining ingredients and serve.
