Red Onion Coleslaw
Ingredients
- 1 cup (250 ml) white vinegar
- 1/4 cup (60 ml) sugar
- 1/4 cup (60 ml) canola oil
- 4 cloves garlic, halved
- 1 red onion, thinly sliced
- 10 cups (2.5 litres) thinly sliced green cabbage
- Salt and pepper
Instructions
- In a small saucepan, bring the vinegar, sugar, oil, and garlic to a boil. Add the onion and simmer for about 2 minutes. Remove the garlic.
- Pour the hot dressing over the cabbage. Toss to combine. Season with salt and pepper. Cover and refrigerate for about 30 minutes. Adjust the seasoning.
