Radicchio Tonic Mocktail
Ingredients
- ½ cup (125 ml) water
- ½ cup (105 g) sugar
- ¾ cup (60 g) radicchio leaves, thinly sliced, plus extra leaves for serving
- 6 fresh rosemary leaves
- 1 tbsp (15 ml) lemon juice
- 2 oz (60 ml) distilled non-alcoholic gin
- 1 oz (30 ml) radicchio syrup, chilled
- 1 oz (30 ml) lemon juice
- A few ice cubes
- 2 ½ oz (75 ml) cold tonic water
Instructions
- In a small pot, bring the water and sugar to a boil. Remove from the heat. Add the radicchio, rosemary and lemon juice. Let sit for 20 minutes. Strain the syrup and let cool. Compost the radicchio and rosemary. Refrigerate the syrup.
