Quick Pickled Radishes

Ingredients

  • 2 cups (280 g) radishes, thinly sliced on a mandoline
  • 2 tbsp (30 ml) lime juice
  • 2 tbsp sugar
  • 1 tbsp jalapeño pepper, seeded and finely chopped
  • ½ tsp salt
  • A few cilantro stems or leaves (optional)

Instructions

  1. In a bowl, combine the radishes with the lime juice, sugar, jalapeño and salt. Let marinate for 15 minutes. Add the cilantro, if desired.
  2. The pickled radishes will keep for 4 days in an airtight container in the refrigerator.
