Puréed Parsnips

Ingredients

  • 2 lb (1 kg) parsnips, peeled and sliced
  • 1/4 cup (60 ml) butter
  • 1/4 cup (60 ml) 35% cream (approximately)
  • Salt and pepper

Instructions

  1. Cook the parsnips in boiling salted water until tender, about 15 minutes. Drain.
  2. Transfer the parsnips to a food processor. Add the butter and cream and purée until smooth. Season with salt and pepper.
  3. Serve with Roast Beef with Dried Cranberry.
