Puréed Parsnips
Ingredients
- 2 lb (1 kg) parsnips, peeled and sliced
- 1/4 cup (60 ml) butter
- 1/4 cup (60 ml) 35% cream (approximately)
- Salt and pepper
Instructions
- Cook the parsnips in boiling salted water until tender, about 15 minutes. Drain.
- Transfer the parsnips to a food processor. Add the butter and cream and purée until smooth. Season with salt and pepper.
- Serve with Roast Beef with Dried Cranberry.
