Peach and Bell Pepper Ketchup
Ingredients
- 2 onions, chopped
- 2 red bell peppers, seeded and diced
- 2 cloves garlic, finely chopped
- 2 tablespoons (30 ml) olive oil
- 3 tomatoes, diced
- 3 peaches, pitted and diced
- 1 cup (250 ml) sugar
- 1 cup (250 ml) white vinegar
- 1/2 teaspoon (2.5 ml) salt
Instructions
- In a skillet, soften the onion, bell pepper, and garlic in the oil over medium heat for about 5 minutes. Add the remaining ingredients and simmer over low heat until syrupy, about 30 minutes. Let cool. Cover and refrigerate.
