Parmesan–Chorizo Consommé “Espresso”
Ingredients
- 3/4 cup (180 ml) chicken broth
- 3/4 cup (180 ml) beef consommé
- 4 to 6 slices chorizo sausage cut diagonally, about 2 mm thick
- 4 to 6 shavings Parmesan cheese
- 2 teaspoons (10 ml) minced fresh chives
- Pepper
Instructions
- In a saucepan, bring the broth and consommé to a boil. Season with pepper. Pour the boiling broth into 4 to 6 espresso cups. Place a slice of chorizo on the rim of each cup. Place a Parmesan shaving on each chorizo slice and sprinkle with chives.
- Serve, allowing each guest to put the garnish into the cup to flavour the broth.
