Panzanella
Ingredients
- 3 cups (150 g) slightly stale country bread, cubed
- 3 tomatoes, sliced into thin wedges
- 2 green onions, thinly sliced diagonally
- 1 celery stalk, diced small
- 1/4 (10 g) celery leaves, coarsely chopped
- 2 tbsp fresh basil, finely chopped
- 1 tsp fresh oregano leaves, finely chopped
- 2 tbsp pine nuts (optional)
- 2 tbsp (30 ml) red wine vinegar
- 3 tbsp (45 ml) olive oil
Instructions
- In a bowl, cover the bread with cold water and let soak for 2 minutes. Gently squeeze the bread with your hands and transfer to a large bowl or salad bowl.
- Add the remaining ingredients and mix to combine. Season with salt and pepper.
