Onion and Chocolate Soup
Ingredients
- 3 Spanish onions, sliced
- 1/4 cup (55 g) butter
- 2 tbsp flour
- 1 bottle (12 oz/341 ml) brown ale
- 1 garlic clove, chopped
- 1 tsp fresh thyme leaves, chopped
- 3 cups (750 ml) chicken broth (see note)
- 1 oz (30 g) 70% dark chocolate
- 8 slices day-old baguette
- 8 slices raclette cheese
Instructions
- In a non-stick saucepan, soften the onions in the butter until golden, about 20 minutes. Season with salt and pepper.Sprinkle with the flour and continue cooking for 1 minute. Add the ale, garlic and thyme. Reduce by half. Add the chicken broth and bring to a boil. Remove from the heat and stir in the chocolate. Adjust the seasoning.
- With the rack in the middle position, preheat the broiler. Place 4 ovenproof bowls on a baking sheet.
- Ladle the soup into the bowls. Top each bowl of soup with 2 slices of bread and cover each slice of bread with a slice of cheese. Broil in the oven until the cheese melts and is golden.
