Mushroom-Gouda Melts

Ingredients

  • 4 slices Belgian-style bread, about 1/2 inch (1 cm) thick
  • 2 slices bacon, finely chopped
  • 2 shallots, finely chopped
  • 8 oz (227 g) white mushrooms, sliced
  • 1 tbsp (15 ml) lemon juice
  • 1 cup (100 g) grated Gouda cheese

Instructions

  1. With the rack in the middle position, preheat the oven to 425°F (220°C).
  2. Place a large wire rack on a baking sheet and arrange the bread slices in a single layer on the rack. Set aside.
  3. In a skillet over medium-high heat, brown the bacon until crisp. Add the shallots and continue cooking for 1 to 2 minutes, while stirring. Add the mushrooms and sauté over high heat until golden brown, about 5 to 7 minutes. Season with salt and pepper. Deglaze with the lemon juice and adjust the seasoning.
  4. Top the bread slices with the mushroom mixture. Sprinkle with cheese and bake for 10 minutes. If necessary, broil until the cheese is browned.
