Mushroom-Gouda Melts
Ingredients
- 4 slices Belgian-style bread, about 1/2 inch (1 cm) thick
- 2 slices bacon, finely chopped
- 2 shallots, finely chopped
- 8 oz (227 g) white mushrooms, sliced
- 1 tbsp (15 ml) lemon juice
- 1 cup (100 g) grated Gouda cheese
Instructions
- With the rack in the middle position, preheat the oven to 425°F (220°C).
- Place a large wire rack on a baking sheet and arrange the bread slices in a single layer on the rack. Set aside.
- In a skillet over medium-high heat, brown the bacon until crisp. Add the shallots and continue cooking for 1 to 2 minutes, while stirring. Add the mushrooms and sauté over high heat until golden brown, about 5 to 7 minutes. Season with salt and pepper. Deglaze with the lemon juice and adjust the seasoning.
- Top the bread slices with the mushroom mixture. Sprinkle with cheese and bake for 10 minutes. If necessary, broil until the cheese is browned.
