Matzo Ball Soup
Ingredients
- 1 cup (250 ml) matzo meal or unsalted soda crackers (about 25 crackers)
- 3 tablespoons (45 ml) vegetable oil or duck fat
- 3 tablespoons (45 ml) chicken broth
- 3 eggs
- 1 tablespoon (15 ml) chopped flat-leaf parsley
- Salt and pepper
- 2 skinless chicken legs
- 1 carrot, chopped
- 1 stalk celery, chopped
- 1 onion, chopped
- 1 clove garlic, chopped
- 2 bay leaves
- 8 cups (2 litres) water
Instructions
- Pulverize the matzo meal in a food processor.
- In a bowl, combine all the ingredients. Season with salt and pepper. Cover and refrigerate for 1 hour (the mixture will firm up but remain quite malleable).
