Mashed Potatoes with Roasted Garlic

Ingredients

  • 1 garlic bulb
  • 7 cups (1.2 kg) potatoes, peeled and cubed (about 8 medium potatoes)
  • 1/2 cup (125 ml) olive oil

Instructions

  1. With the rack in the middle position, preheat the oven to 350°F (180°C).
  2. Slice off the top of the garlic bulb so that each clove is exposed. Place on a sheet of foil and wrap tightly. Bake for 45 minutes or until tender. Let cool.
  3. Meanwhile, place the potatoes in a pot. Cover with cold water. Season with salt. Bring to a boil and cook until tender. Remove 1 cup (250 ml) of cooking water from the pot and set aside. Drain the potatoes and return them to the pot. Over medium heat, heat the potatoes for 1 to 2 minutes, stirring with a wooden spoon, to evaporate any remaining cooking water.
  4. Using a potato masher, roughly purée the potatoes. Squeeze the garlic cloves out from their skins and into the potatoes. Add the oil and beat with an electric mixer. Add some of the reserved cooking water to obtain a smooth purée, as needed. Season with salt and pepper.
  5. Perfect served with meat, poultry and fish.
