Masala Chai

Ingredients

  • 8 black peppercorns
  • 5 whole green cardamom pods, lightly crushed
  • 5 cloves
  • 1 cinnamon stick, about 2-inch (5-cm) long
  • A few thin slices of fresh ginger
  • 2 cups (500 ml) water
  • 2 cups (500 ml) whole milk
  • 2 tbsp (30 ml) strong unflavoured black tea (Darjeeling, for example)
  • 3 tbsp (40 g) sugar, to taste

Instructions

  1. In a saucepan over medium-high heat, heat the spices until they start becoming fragrant. Add the water. Bring to a boil, reduce the heat and simmer for 10 minutes.
  2. Add the milk, tea and sugar. Bring once more to a boil and simmer for about 5 minutes, or a little more for a thicker beverage. Strain through a sieve placed over a large cup with a spout or a teapot. Compost the aromatics. Pour into cups.
